Mok Kai (steamed chicken with herbs) is one of Lao authentic dish. With herbs and Padek makes incredibly delicious.
Step 1. Use a mortar and pestle to pound chili, garlic, Asian red shallot and salt. Then mix together with chicken. Add slices of lemongrass, dill, green onion and more chilies if you like.
Step 2. Season with fermented fish sauce (padek) and MSG. Taste to rectify if needed.
Step 3. Use banana leaves or aluminum foil to wrap and steam about 20 to 30 minutes or until the chicken is cooked. Serve. Zap!
