Khao poon Luang Prabang is a rice noodle soup with beef. The flavor of the beef soup broth is the most important. And when served with rice noodles (Khao Poon) and vegetables or herbs, it is the perfect combination. Here is the secret to make the perfect beef broth.
Step 1. Grill or roast galangal, garlic, and chili on the pan or BBQ stove until brown cooked then leave in the plate.
Step 2. On the same pan or stove, grill the beef and bone until brown color but not cooked
Step 3. Caramelize the sugar, then add water, salt, and roast galangal heat until boiling
Step 4. Add beef and bones and fish sauce, make slow cooked with low – medium fire about 2h or until beef is tender. Always remove the float fat to get the soup clear color at the end.
Step 5. Slices cabbage, cooked bamboo, long green bean, green onion, culantro, and coriander.
Step 6. After the beef is tender, take it out and slice in piece. Then add the roast garlic into the pot and heat slow fire about 10mns.
Step 7. Prepare 1 bowl for one person:
- Add rice noodle 100g ( less or more), add green beans, bamboo, cabbage, green onion, cilantro, and coriander. Add slices of meat on top
- Then pour hot soup into the bowl then 1 tea spoon of chili powder and lime juice or as you want.
- Serve the hot soup bowl with the plate of roast chili and long green bean with shrimp paste on the table.
Tips: The soup before pouring into the bowl should be medium-hot to make it more delicious!
