Macarons de Saint-Emilion

The mythical Saint-Emilion macaroon is prepared with only 3 ingredients: almond powder, egg whites and sugar. A fairly easy recipe for a delicious cake that will go perfectly with coffee or tea time.

1. Preheat the oven to 150°C in traditional cooking mode.

2. Spread the almond powder on a baking sheet covered with parchment paper and put it in the oven for 15 minutes. to roast it, then let it cool.

3. Then beat the egg whites with an electric whisk or a robot, add the sugar in several steps while the egg whites are rising. You should get a stiff meringue.

4. Mix gently the roasted almond powder with the meringue, the almond powder must be completely cooled at this stage so that the preparation does not lose its consistency.

5. Put the macaroon dough in a piping bag, and form your macaroons on a baking sheet covered with parchment paper (or use a spoon if you don't have a piping bag). You can flatten them slightly with the back of a spoon to give them a nice flat shape. You should be able to make about 30 small macaroons.

6. Leave the macaroons to cool on the baking sheet for 1 hour at room temperature before putting them in the oven.

7. Then, bake them in a preheated oven at 180°C for about 12 minutes.

8. Take the macaroons out of the oven and let them cool before serving.
