The weather in December in the farm is so breezy, one the the best Lao traditional dish is roasted eggplant to make sauce and eat with hot sticky rice and fish or beef jerky :). This sauce is so simple to cook but the taste is super delicious. Let's start !!
1. Roast the eggplants on hot charcoal until completely soft. Then peel off the skin.
2. Roast fresh chili as well.
3. Have a mortar and pestle to finely pound the roasted chili, add garlic, salt, and MSG. Then add the roasted eggplants, and pound roughly. Adjust the taste as you like. Add sliced green onion and coriander. Eat with sticky rice. Enjoy !!
