Who eats snails? Who likes spicy? If you answered yes to both questions, then you should try this recipe. We made it as we needed something to eat with beer. The result is better than we expected. Let see how to cook it.
1. Boil water in a huge pot, add galangal, lemongrass, kaffir lime leaves, and salt. Then add snail. Cook with high heat about 15 minutes. Then take out only snails from the pot and let is cool down in a big bowl.
2. Bring a mortar and pestle, add chili, garlic, sugar, MSG, shrimp paste (kapi). Pound roughly.
3. Add slices of cherry tomato, squeeze lime, add fermented fish sauce, and use a pestle mix well together. Adjust the taste as you like.
4. Pour the dressing from a mortar to the bowl of cooked snails, add slices of culantro. Then use a big spoon mix them very well together. Enjoy!
