Or Pa is kind of fish soup with a thick broth. It is a traditional dish of Lao cuisine. The flavor of the river fish and the fermented fish sauce are perfectly combined with herbs. This dish will show you the real aroma and texture of Lao food.
1. Use a pan to roast fresh chili, garlic, red shallot, lemon grass, and galangal until brown
2. Place those ingredients to a pot, add water and salt.
3. Once it boiled, add fermented fish sauce, and fish.
4. When it's boiled again, add eggplants and Khao Beua. Cook about 15 mns.
5. Adjust the taste and add fresh dill, following with green onion. Gently stir and transfer to a plate, sprinkle with coriander and serve.
